Cinco de Mayo is just around the corner. Did you know that the holiday, celebrated on the 5th of May each year, is more than just a celebration of Mexican culture?

Cinco de Mayo is actually a celebration of the Mexican army’s defeat of the French troops at the Battle of Puebla in 1892. Four thousand Mexican soldiers stood their ground against a much larger and better equipped French force. It was a win that would go on to define the end of European occupation in the Americas.

While certainly the American celebration is more about tacos and tequila, that doesn’t mean we can take a moment and be grateful for the wide-spread independence that makes the North American continent such a special place to live.

If you’re going to celebrate Cinco de Mayo, you gotta have some guacamole. Here’s my take on classic guacamole!

Classic Guacamole for Cinco de Mayo | Laurel and Iron

Ingredients:

4 Hass avocados
4 cloves of garlic, finely minced
1 jalapeno pepper, finely diced
1 roma tomato, diced
1/2 cup diced red onion
1/4 cup fresh cilantro, chopped
juice of 1 fresh lime
salt, to taste

Method:

  1. Gather and prep all your ingredients

  2. Half each avocado, remove pit, and scoop into a Molcajete mortar (similar here*)

  3. Add garlic, salt, and lime juice

  4. Mash to desired consistency (I like things a little chunky!)

  5. Stir in onion, tomato, jalapeno, and cilantro

  6. Serve with tortilla chips, veggies, plantains, or just a spoon!

  7. If you have left overs, store them in an airtight container with a layer of plastic pressed tightly over the top. Store for up to two days.
